Easy Does It: Recipes for A Delicious Meal, No Cooking Required

No-cook Italian dishes on a table
Summertime in Italy is all about quality ingredients and simple recipes. Take a slice of melon. Wrap it in a piece of prosciutto. Call it dinner. We won’t judge. Here are four recipes to prepare a summer meal without ever turning on the oven.

PROSCIUTTO & FIGS

6 figs
16 oz Prosciutto
Mario Fongo “Il Panate”
Wash figs, and cut them into halves. Lay the prosciutto to cover your aperitivo board. Arrange figs around the board, and add a handful of Mario Fongo “Il Panate.”

Heirloom Tomato Salad

HEIRLOOM TOMATO SALAD

9 oz Heirloom Tomatoes
1.5 oz Olives
1 tablespoon extra virgin olive oil
1 pinch of salt
3 pieces of grissini di focaccia

Wash heirloom tomatoes and cut them into quarters.  Arrange the tomatoes onto the plate, and add olives. Splay your grissini di focaccia across the side of the plate. Drizzle with extra virgin olive oil, and a pinch of salt.

Tomato and Burrata salad

CHERRY TOMATO & BURRATA SALAD

2 balls of burrata
9 oz cherry tomatoes
1 tablespoon extra virgin olive oil
1 pinch of salt
6 pieces of Pane Guttiau

Wash cherry tomatoes, cut in halves. In a bowl, dress the cherry tomatoes with extra virgin olive oil and salt, mix. Place six pieces of Pane Guttiatu onto your serving plate. Next, put cherry tomatoes onto the serving plate atop your Pane Guttiatu. Cut each ball of burrata in half. Place the halved burrata over the cherry tomatoes.

Peach and zucchini salad

PEACH & ZUCCHINI SALAD 

Serves 2

1 tablespoon olive oil
1 pinch of salt
1 teaspoon lemon
2 handfuls of mixed greens
1.5 oz white peaches
2 oz zucchini
1.5 oz Nonno Nanni primo sale

In a bowl, mix your greens with olive oil, salt, and lemon. Using a mandolin, slice your zucchini and white peaches as thin as possible. Next, cut your Nonno Nanni Primo Sale cheese into cubes. Top your mixed greens with the primo sale, zucchini, and white peaches.
