SALUMI COTTI

Located in the medieval hilltop town of San Gimignano, Piacenti‘s salumificio cures prosciutto following ancient Tuscan traditions that can be traced back to the House of Medici. The pork is hand-rubbed not just with salt but with spices, such as wild juniper berries and the finest black pepper. Decidedly different than its northern cousins, the resulting Prosciutto Toscano DOP boasts intense flavor with an almost spicy finish. Try their Toscano loin at 30% off this week! .

Based in Lombardia, Rovagnati specializes in producing a  high-quality prosciutto cotto (cooked ham). In the 1970s, the founder’s son, Paolo, had a vision to produce a unique prosciutto cotto. After several years of testing raw materials and production techniques, he finalized the very first versions of what is now known as Gran Biscotto. In Milan, when you taste something really delicious, you typically say “È come un biscotto,” or “It’s like a cookie.” Legend has it that Paolo’s wife Claudia said these exact words when she tasted the new prosciutto cotto, and the rest is history! Try their tartufo variety this week at 30% off along with their porchetta and mini mortadella, and see if you agree.
